The Nitty Gritty... Grits!

I have yet to have a good experience when attempting to make grits. I just can never get them right. The consistency is always wrong, no matter how closely I follow the directions.
One of my food goals is to make a really great grits dish. I don't want to make just any old grits. I want to make some baked cheese grits. I will tackle this dish and I will conquer the world of grits.
I've been reading a lot of different cheesy grits recipes and I found one in my mother's cookbooks, Breathitt County Homemakers. This is the one that I am going to try.
Now I know that I couldn't beat Harold with a stick and get him to try grits. So, this is probably something that I try when i am visiting Wanda.
Here's the recipe if you want to give it a try.
1/2 tsp. salt
2 2/3 c. water
2/3 c. quick cooking grits
2 TBSP butter
1 1/2 c. shredded cheese
2 eggs, beaten
1/8 tsp. pepper
Preheat oven to 350.
Grease a 2 quart baking dish.
Add salt to water. Bring to a full, rolling boil. Add grits. Return to boiling point. Cook, stirring constantly until very thick, about 6 minutes.
Remove from heat. Add butter.
Mix cheese, eggs, and pepper. Stir into grits.
Pour into baking dish.
Bake 40 minutes or until lightly browned.
This makes about 6 servings.
