Chocolate Mayonnaise Cake

In our family, the family meal has always been as much about dessert as it has been about the meal. Many times, late evening cravings often found us in the kitchen making candy or a cake. We rarely bought packaged snack cakes because we always were baking or making something sweet.

One of my favorite things that my mother made was Chocolate Mayonnaise Cake. This cake was so rich and flavorful and moist. We usually ate this cake warm out of the oven without any type of frosting or icing. The recipe for a true happy childhood should include warm chocolate mayonnaise cake with an ice cold glass of milk. Nothing can beat it.

Harold hates the thought of mayonnaise in anything, especially chocolate cake. But I promise, you would never know it was the “secret” ingredient in this one!

Here is the recipe that my mother used for this family favorite:

Ingredients

3 C. Flour

1 ½ C. Sugar

2/3 C. Baking Cocoa

2 ¼ tsp. Baking Powder

1 ½ tsp. Baking Soda

1 ½ C. Mayonnaise

1 ½ C. Warm water

1 ½ tsp. Vanilla

Stir together dry ingredients; then stir in mayonnaise. Gradually add water and vanilla. Bake in a greased and floured 9 x 13 cake pan. Bake at 350 degrees for about 30 minutes.
