Seven Layers of Sunshine!

I am a salad girl! I love all types of salads and always include them in the menu whenever I can. One of our family favorites is a traditional Amish Seven Layer Salad.
The fad with layered salads is that you build them deep in trifle bowls to show off how pretty they are. And sure, I would do that too if I was taking it somewhere for a special occasion. But for the typical family meal, I spread my layers out in a 9 x 13, or similar, baking dish. You still get all the layers but it's easier for dipping!

Seven Layers: lettuce, tomatoes, peas, boiled eggs, mayonnaise dressing, shredded cheese and bacon crumbles. I could easily turn this into a 12 layer salad!
Sounds simple enough, right? It is! But oh so good! This is the salad that Russ asked for as part of his 25th birthday dinner.
The only recipe here - that's not a recipe really - is the mayonnaise dressing. It's a simple mixture of mayonnaise and sugar. I don't have measurements; just mix them together until it tastes good to you and the mayonnaise starts to break down. And when you spread it on the salad, be sure to take it all the way to the edges.
This is one of those salads that's best made a while before you are ready to serve it. If you do an internet search for the mayonnaise dressing you will find that there are some recipes that include vinegar. I have never added vinegar. if you decide to, please let me know how it turns out.
Another note - About the peas. You can use frozen peas or any of the many varieties of fresh sugar snap peas. Canned sweet peas work just as well.
Another great variation is to switch the lettuce for spinach! Being a spinach fan, I really like this!
