A New Take on Tacos

I don't remember where I first read about it, but when I did the thoughts of it hung in my mind for days. It was awesome! It was genius! I knew that this was a meal that we would have to try. It was so simple that I didn't write the recipe down. I just kept it in my mind and it festered and grew and I changed it around, tweaked it until I knew this was going to be really great.
Taco Waffles! How wonderful! What a wonderful way with one of our favorite things! We eat tacos, soft tacos, walking tacos, taco salads, taco casseroles. But taco waffles! It was like magic.

It had to wait though because I didn't have a waffle iron! And then suddenly, there was divine taco intervention! The auction group we belong to had, not one, not two, but three waffle irons. All new in the box! I heard angels singing! I bid on one and watched the others! At the end of the week I was the owner of a brand new waffle iron for only $3.00. We went to the auction meet and picked up the waffle iron and headed straight to the grocery store. We would not wait one more day for taco waffles! We got all the fixins and went straight to Wanda's house! We gathered in the kitchen and the magic began!
The concept is a simple one. Mix up your favorite cornbread batter. We used Jiffy Mix because I really like the hint of sweet that it has. You can use a mix, or make your own. Use the cornbread batter in the waffle iron and make cornbread waffles! Cornbread waffles!!! Do you have any idea the sheer number of things you can do with a cornbread waffle!
While making the waffles, go ahead and put your hamburger on to brown. Use as much or as little as you need to feed your crowd. We bought the large family pack. Brown the hamburger and add the prepackaged taco seasoning, following instructions for the seasoning. Be sure to get enough packs to adequately flavor the amount of meat you will be using.
So at this point you have your taco meat and your cornbread waffles. Top it with whatever it is that makes a good taco for you! Lettuce, tomatoes, cheese, salsa and sour cream. Great with guacamole, refried beans and rice!
Needless to say! The angels sang all day and this meal was given the two thumbs up by everyone! Russ enjoyed it so much he insisted on keeping the waffle maker!
